Outdoor sports nutrition: the Carrot Cake

We won't easily forget this March 2020. Quarantine themselves is not easy for anyone. For us climbers is really a huge sacrifice. But it must be done in a radical way, so we are doing it.

Work out at home is, not only a necessity but due care of ourselves. In fact, last week many web sites gave much renowned advice on how to keep fit at home. Today we chose to speak about nutrition.

We suggest you some easy to do and quick recipe to prepare nutritious, tasty and relatively low in calories snacks.  let's try them for our workouts ar home, and later (hope as soon as possible) for our outdoor climbing.

Thus, may I introduce the recipe of the Carrot Cake. It's a relatively low calories cake (346 Kcal per 100g).  It's rich in vitamines (Vitamin A, betacarotene, niacin, pantothenic acid...), minerals (magnesium, potassium, Phosphorous, calcium), and high in fiber. It's nutritious and easily digestible. Try it out and let us know!

It's not easy to decide how to eat during a climbing day. We'd all love something tasty, but also easily digestible. Something energizing but fairly low-calories. Rich in mineral salts. And, finally, something that can be easily carried in the backpack, that doesn't leak any fluids and doesn't dirty our gears.

Here is the recipe for the Carrot Cake. It's easy to do and quick (about a half-hour plus 35 minutes of cooking), and, in my opinion, it's a very suitable snack for climbers. Easy to be carried out, not wet and not greasy. About 346 Kilocalories and 43g of carbohydrates per 100g.

The binding is mostly vegetable oil (a pleasing quality), plus two eggs (not a great deal).

It has a discrete content of fibers, and supplies you with a certain amount of healthy minerals: potassium, magnesium, phosphorous, calcium. And various vitamins: Vitamin A, betacarotene, niacin, pantothenic acid. In short, this cake is not as gorgeous as a Sicilian cannolo, but it's both less caloric and easier to digest. And, rather, it's not less nutritious.

Carrot Cakes: Ingredients for 6 people

  • 300g carrots
  • 200g semi-whole flour
  • 100g sugar
  • 80g seed oil (or similar)
  • 2 eggs
  • A spoon of backing powder
  • a sachet of vanilla flavoring
  • backing paper, or a little butter to grease the baking sheet
  • salt

Also need

  • A blender (at least 650cc)
  • A mixer
  • A 25cm round baking pan
  • Oven to 180 °C for 35 minutes

Instructions

Turn on the oven at 180°C.

Grease the baking pan, or line it with some backing paper.

Peel the carrots and blend them well with the eggs and the oil.

Put all into a capacious container. Add the sugar, the baking powder, the vanilla and mix well. Then mix the flour slowly. Finally, add a pinch of salt and put it into the baking pan.

If liked, you can add to the dough a bit of limoncello, or of cointreau, or a little cinnamon, or some crushed almonds.. or whatever. Once cooked, this cake can be stuffed with a thin layer of marmalade (for example orange marmalade). I usually sprinkle it with icing sugar.

Bake it in a preheated oven at 180°C for about 35 minutes check if the cake is well cooked (for example sticking into it a toothpick), and, in case, take it out of the oven. Otherwise leave it there for few more minutes, until the extracted toothpick is dry. 


 

Tips

It's eaten cold, and better if within 24 hours.

Before doing an activity (both workout or walking or climbing), accompany it with a cup of tea, or some other energizing infusion. And even with Greek yogurt, for adding some proteins to your snack.

If you, instead, eat this cake in the evening, it's better if you accompany it with a relaxing herbal te... and, in these days of quarantine,  even with a cup of chamomile...
